Lisa’s Cheesy Cheddar Chicken Chowder

So here is my very favorite homemade comfort food.  This soup was a creation of my friend Tracey in Nashville, who gave me her handwritten recipe over 20 years ago.

I’ve been playing with the recipe for a long time and it has become our favorite soup of Autumn.  If you make it, let me know how it turns out!  And if you have a favorite savory recipe in the fall, please share it in the comment section, if you have time.


Lisa’s Cheesy Cheddar Chicken Chowder

  • 8 skinless, boneless chicken thighs
  • One package of your favorite link sausage (Apple Chicken is a nice choice)
  • 2 large potatoes
  • A bag of crinkle cut carrots
  • ½ C butter
  • ½ C flour
  • 2 cups milk
  • 3 cups grated sharp cheddar
  • 2 T olive oil
  • Salt & pepper
  • Tony Cachere's creole seasoning (or whatever is your favorite savory seasoning)

In a large soup pot, cover the thighs with water.  Add a healthy amount of salt and pepper.  Bring to a boil, then cover and reduce heat to low.  Cook on low for 30 minutes.  Meanwhile, cut your potatoes into dice-sized cubes.  You might want to cut the crinkle carrot medallions in half so they are more bite-sized.  Remove the chicken to a bowl with a slotted spoon.  Strain the broth into a large bowl, wipe down your pot, then return the broth to the pot.  Put veggies in and bring to a boil.  Reduce heat to medium and slow boil for 20 minutes.  Cut link sausages into bite-size pieces.  Heat olive oil in a skillet then sauté the sausage to render out the fat.  Once chicken is cool, cut into bite-sized pieces, being careful to remove any visible fat.  Melt whole stick of butter in a skillet over medium heat.  Add the flour to the melted butter and stir until it becomes a consistent paste.   Slowly add milk, ½ cup at a time, stirring constantly so that it becomes a thick base.  After you have slowly added the 2 cups of milk, the base should be thick, bubbly, and smooth (increase heat slightly if it isn’t thickening).  Add the cheese.  Continue stirring until all the cheese is melted.  Pour cheese mixture into vegetable c hicken broth.  Add the chicken and sausage and heat through.  Season with Tony’s until it has enough kick for your family, being careful to not over season.  Serve with your favorite bread and enjoy!!
